Sourdough Bread Rolls / Burger Buns



Ingredients:

50 g unsalted organic grass fed butter/organic grass fed lard at room temperature
100 g raw organic milk
100 g active white sourdough starter
1 organic free range egg
1 tsp unrefined sea salt
1 tbsp raw honey (or other healthy sweetener)
300 g white organic flour (all purpose or strong, unbleached)
organic rice flour for shaping the rolls/buns (optional)
more unsalted butter/lard for greasing and brushing (around 2 tbsp)

Instructions:

Combine all ingredients in a bowl until you have a soft pliable dough.
Cover the bowl with a cling film and leave at room temperature to ferment for minimum of 8 hours or overnight.
In the morning or after fermenting the dough place it into the fridge for 2 hours so it is more manageable later.

After 2 hours melt a few tsp of butter/lard in a small saucepan, grease the glass or stainless steel baking dish of any shape with melted butter/lard.
Take the dough out of the fridge and turn it into a floured (I use rice flour but any will do) working surface and using a knife, a bench scraper or your hands divide the dough into 8-10 parts, make rolls/buns and place them into the greased baking dish 2 cm apart from each other and from the walls of the dish.
Using pastry brush apply the rest of the melted butter/lard on each roll/bun covering them all over.
Cover the baking dish with the rolls/buns with a cling film and leave to rise in a warm place for 3-5 hours or until they double in size and the sides of the rolls/buns are touching each other and the tray.


When ready preheat oven to 220°C, bake the rolls/buns for 15-20 minutes or until golden brown.
Cool them down.

They keep well in airtight container for up to a week, may be even longer I never get to test that as we usually finish ours off within few days.

They are excellent as dinner rolls with main dish and gravy or with plain butter or herby butter especially when still still warm. They are also excellent as burger buns, they are very soft and do not crumble when you squeeze them together with the burger meat in between and are not chewy at all.

Sourdough Rye Brick Bread (Kirpichik)

This bread resembles the one we used to have in Soviet Union times and was called Kirpichik (Brick). The bread using this recipe comes out tasting exactly like the one we used to buy in the shop.
This bread is made in 2 stages. First you need to make production sourdough and then the bread itself.
As always I would recommend reading through the whole recipe before starting to implement it.



STAGE 1

Ingredients:

For production sourdough:

50g active rye sourdough starter
75g rye flour
75g filtered water

Instructions: 

In a medium bowl mix together all the ingredients using spatula. It will be a thick paste. Cover the bowl with a cling film and leave to ferment at room temperature for minimum of 8 hours or overnight.

STAGE 2

Ingredients:

all production sourdough (approx 200 g)
350 g filtered water
350 g white strong flour
150 g rye flour
1 tbsp raw honey or sugar (optional)
1 ½ tsp unrefined sea salt

Equipment:

medium bowl for mixing the dough
spatula
stand mixer (optional)
cling film
bread tin

Instructions:

Mix all ingredients together and knead with a spatula or in a stand mixer with a bread hook for 8 minutes, the dough will be quite liquid. Transfer the dough into a medium bowl, cover with cling film and leave to ferment at room temp for a minimum of 8 hours or overnight.

After the initial ferment, transfer the dough into the bread tin (line it with unbleached parchment paper if using nonstick one), the dough should occupy slightly more than a half of the tin, cover with cling film and leave at room temperature to proof for around 5-8 hours. It will rise approx 1.5 times and will be bubbly.


Heat the oven to 220°C Fan/ 240°C and bake the loaf for 30-45 minutes depending on your oven. Bake out of the tin for the last 10 min. Take the loaf out and cool it on the rack covered with the kitchen towel. Make sure it is completely cold before cutting it.


This bread keeps well in a plastic bag for a week which keeps the bread very soft and chewy. I noticed that after a week it starts getting white mould, this is because the water content of this bread is quite high in relation to flour so try consuming it within one week, or you can cut it up and freeze some. You can also keep it in a cloth or paper bag and it will stay without mold longer but will be quite hard.To defrost, simply place in a warm oven for a few minutes if in a hurry or place into a plastic bag in the kitchen counter overnight.

Sourdough Biscotti


Ingredients:

50g white sourdough starter
40g unsalted butter, softened
80-100 g sugar
40g raw honey
2 large eggs
1 tsp vanilla extract
pinch of unrefined sea salt
250g + all purpose flour
80g crispy nuts of your choice roughly chopped (can use crispy seeds too)
50g shaved coconut
100g dried fruit roughly chopped (I use mixture) 

All ingredients are organic except the sea salt.

Instructions: 

Preheat oven to 180°C /160°C Fan together with the baking stone (if using); line baking sheet with parchment paper if not using the baking stone.

In a medium bowl combine starter, eggs, butter, sugar, honey, vanilla extract and mix up with a spatula or if using a stand mixer use the whisk attachment. Then gradually add salt, flour, coconut, nuts and dried fruit and mix using the spatula or bread hook (if using the mixer) and mix till the dough forms, add more flour if needed, the dough should be heavy, greasy and not very sticky. Do not over-knead. Form a ball and place in a small bowl (it is not going to expand) cover with cling film and leave at room temperature overnight or for minimum of 8 hours.

When ready remove the dough from the bowl and form into a long flat log around 5cm thick, divide into 2 logs if desired.
Place on the lined baking sheet or straight into the hot baking stone and bake depending on your oven from 25 minutes for up to an hour, it should be slightly brown.

When ready take it out of the oven and cool it down for around 30 minutes or until cool enough to handle. When cool gently cut the loaves on the angle into 1cm slices (a serrated bread knife works best). 
Return the pieces into the oven and bake the biscotti for another 10-15 minutes on each side, less if you like it softer. Store in an airtight container.

Sourdough Flatbreads

This recipe is very tasty to have for breakfast with your favourite dip, salsa or chutney; it is good with meats or sausages, salad or sautéed vegetables or just with some butter and cheese. These flatbreads are absolutely fantastic to cook on the barbecue grill along with the meats and vegetables. They are best to eat while warm.


Ingredients:

200 g (under 1 US cup) plain organic yoghurt (I used here raw unpasteurised)
100 g (under 1/2 US cup) active white sourdough starter (here is the recipe)
300 g (1 1/4 US cup) organic white all purpose unbleached flour
1 tsp unrefined sea salt
1 tbsp raw organic honey (optional)
Organic rice flour for dusting

Equipment:

Mixing bowl
Cling film
Rolling pin
Cast iron grill pan (or regular cast iron pan, or barbecue frill)

Instructions:

Mix together yoghurt, starter, flour and salt, knead for a few minutes. If you or your child do not enjoy the sourness too much just add honey to cover that up, you might want to add a bit more flour. The dough should be soft and just slightly sticky. Transfer the dough into lightly floured bowl, cover with cling film and leave to ferment for 8 hours or overnight. I usually mix the dough in the evening and ferment it overnight so we can have the breads for breakfast. I left it out longer and used one half for breakfast the next morning and the rest (resting covered at room temperature) for breakfast the day after and it was still very yummy.

When ready heat the cast iron grill pan and divide the fermented dough into 8 balls. Dust the counter with some rice flour and roll out one of the balls into a flat circle around 2 mm (1/8") thick, make sure it is smaller in diameter then your grill pan if you have a small one like I do. Transfer the dough circle straight into the hot grill pan. Grill each side for around 1 minute or until ready.


Your grill pan should be really hot and not oiled. Transfer the flatbread straight into a plate to eat right away or a kitchen towel lined bread basket or shallow bowl and cover it with another kitchen towel to keep it soft. Repeat with the rest of the flatbreads and keep them covered with tea towel.

The flatbreads keep well covered with a kitchen towel for about an hour, for longer storage transfer them into the plastic bag, reheat on the grill.

Sourdough Pizza


I have adopted this recipe from Jamie Oliver's book 'Jamie's Italy'. I love this book and love Jamie, he's got so many delicious recipes, so here goes:

Makes: 4 large (or 6 medium) pizzas

Crust:
300 g white organic stone ground strong flour
150 g white sourdough starter (same as here but made with white organic all purpose flour)
1 tbsp raw organic honey
1 tsp with a hip unrefined sea salt
150 g lukewarm filtered water and grass-fed organic raw milk (50 / 50)

Toppings (all ingredients organic):
1) Salami, courgette, basil, tomato and mozzarella, black pepper and sea salt
2) fried up unsmoked streaky bacon, sauteed onion, mozzarella, sweet pepper, tomatoes, black pepper and sea salt
3) garlic, parsley, black pepper and sea salt (''garlic bread'')
4) kids' pizzas with organic no-poo or home-made ketchup (my son doesn't like the tomato sauce), grass-fed pork chipolata sausages or any other organic sausages of your kids' liking, sweet peppers, sea salt
or any topping of your liking

Basic Tomato Sauce:
2 midium organic tomatoes
1 clove organic garlic
bunch organic basil leaves (trimmed)
grass-fed organic raw butter
sea salt and black pepper

First you need to make the crust. Bring all the ingredients together for the crust and knead for about 10 minutes by hand. Place the dough into the slightly floured dusted bowl and cover with cling film. Leave to ferment overnight or at least for 8 hours.

In the morning, the next day, knead the dough for about 1-2 minutes, cover in a bowl and leave for 2-3 hours to proof.

About half an hour before you want to bake your pizzas heat the oven with the baking stone inside to 250⁰C. I use my baking stone, but you can use any baking tray.
At the same time start preparing your toppings and tomato sauce. For tomato sauce you need to heat the frying pan with some butter, slightly fry chopped garlic for a bout 1 minute, then add some chopped basil leaves and add tomatoes (to remove the skins simply grate the tomato on the carrot grater), season with black pepper and sea salt. Simmer this for 15 minutes on the medium heat to reduce some of the water from tomatoes.

While the tomato sauce is simmering you can prepare your toppings for quick and easy application. All the quantities are up to your taste. Chop thinly courgettes, tomatoes, fry up  streaky bacon with salt and pepper, cut and fry chipolata sausages, cut a small onion into thin rings and saute in some butter with a bit of sea salt and a bit of brown sugar or rapadura until caramelised, finely cut up sweet peppers into long strings, cut up mozzarella or tear it into chunks, wash some basil leaves and parsley,  grind some sea salt and black pepper. I usually place each ingredient into a separate little bowl for convenience.

Now you are ready to actually make pizzas. Take your dough and divide it into 4 (or 6) pieces, set aside 3 (5) of them and roll one thinly (1-2 mm) on lightly dusted surface into almost round shape and place it on the parchment paper (in order to easily transfer it to the baking stone I place the parchment paper onto a cutting board). Apply the tomato sauce, toppings and bake for 10 - 15 minutes depending on your oven until golden and crispy.

Homemade Sourdough Sweet and Sour Bread with Caraway Seeds


I am fairly new to bread making. I have read in a book once that you need to perfect one given receipt of the bread by baking it as many times as you need to and only then move on to the next one. Well this is what I have done with this particular receipt. I baked it many times with different types of flour, white plain, wholemeal, rye, spelt, strong, very strong, but now I generally prefer stoneground unbleached strong white flour. I am originally from Latvia and love all sorts of European breads and especially sourdough. I tend not to use yeast in my baking as it is not very healthy, so I made my own rye and white sourdough starters. For this receipt I use rye sourdough starter to get the most sourness.

This receipt makes a small loaf of bread for our family of 2. I usually bake it every 5 days. I freeze some because it does not stay fresh  longer then for a couple of days.

Ingredients:
300g white strong bread flour
100g rye sourdough starter
150g tepid water (preferably filtered)
1 full tsp coarse sea salt
1 full tbsp raw organic honey
1-2 full tsp caraway seeds

a fairly deep and wide bowl 20 cm wide and 10cm deep
square piece of muslin cloth / cheese cloth approx 40 cm by 40 cm
baking stone (optional)
baking paper

Preparation time: around 2 days

I would advise you to read this receipt at least once before baking your own bread so you can plan your time.

Remember to revive your sourdough starter at least 24 hours before you use it.

Combine all the ingredients in a bowl and knead it for about 5 minutes. If the dough sticks to your hands try not to be tempted to add more flour just pour some extra virgin olive oil into your hands and knead some more. Place the dough into a lightly floured bowl, sprinkle it with some flour and cover with a cling film or a tea towel. Leave it in a warm place to ferment overnight. It needs to double its size. Usually I do it in the evening before going to bed.

Then you will need to knead the dough again for about 1 minute, cover it with the same cling film or tea towel and leave it to proof at a room temperature. It needs to double the size again, so it will take around 5 hours. As this is the free shape bread you would need a special proofing basket or like me just a right size bowl lined with some cheese cloth.

Now you need to prepare the oven. For a free shaped bread you would need a baking stone or if you do not have one just use a baking tray.

For baking stone just place it on the oven rack in the middle of your oven. If using the baking tray, turn your baking tray upside down and place it in the middle of the oven. Fill a stainless steel tray or a glass roaster  or any other oven proof container, fill it with water and place at the bottom of your oven, this will make a very nice crunchy crust. Switch the oven on the maximum, usually it is 220⁰C for one hour. It is very important to let the oven heat up properly.

After your dough has doubled in size for the second time and your oven is smoking hot take the baking paper and cut out a piece to go into the oven, sprinkle it lightly with flour and place it on a cutting board so later you can easily transfer your dough straight onto your baking tray or stone. Take you dough now and place it carefully onto the baking sheet by slowly turning the bowl with cheese cloth upside down. Now gently and very slowly without touching the dough remove the cheese cloth. Sprinkle the top of the dough with some flour, open the oven and carefully transfer the dough on the baking sheet onto the baking tray or baking stone by carefully sliding off the cutting board.

Bake your bread for around 35-45 minutes. It will depend on the kind of oven you are using. I would recommend to check on your bread after the 25 minutes in order to determine how much more time will it need and if the temperature is right. If you see that your bread is too brown even black turn the oven down to 190 - 200⁰C and bake for another 5 minutes. To determine that your bread is ready, take it out of the oven and tap the bottom of it with your knuckles, the sound should be hollow. If you still not sure just give it another 5 minutes in the turned off oven.

After your loaf is ready take it out and place it on a rack to cool. Leave it to cool for at least 1,5 hours before cutting it up and trying a piece.

Please feel free to experiment with your bread, add caraway seeds, omit them, once I added 1 grated raw tomato without skin and some chopped up fresh basil leaves (reducing the amount of water used accordingly) and it still tasted really good. Ржаная Домашняя Закваска

Существует большое количество разных способов приготовления закваски. Я здесь помещаю способ опробованный мною трижды и сравнительно простой. Я предпочитаю не использовать коммерческие дрожжи и использовать только муку и воду.

Для приготовления ржаной закваски вам потребуется:

250 мл питьевой воды, если вода слишком хлорированная то лучшу использовать из бутылки
250 гр ржаной муки
2 органические виноградины или другие съедобные ягодины
1 литровая стеклянная банка с крышкой
деревянная ложка
марля и резинка

В литровую банку налить 250 мл питьевой воды, не используйте хлорированную воду, желательно фильтрованную или из бутылки, а также можно использовать воду в которой варили картофель, перед использованием остудить. Туда добавить 250 гр ржаной муки и хорошенько перемешать деревянной ложкой. В эту смесь добавить немытые органические виноградины или другие ягодины, которые не были обработаны никакими химикатами. Это ускорит процесс активации натуральных дрожжей.

Накройте бакну марлей и закрепите резинкой. Поставьте банку в тёплое место на кухне. Не реже одного раза в день хорошенько размешивайте смесь деревянной ложкой.

На 2-3 день перед размешиванием вы заметите маленькие пузырьки, это означает что дрожжи в закваске активизировались. Если на 3-4 день пузырьков нет то поставьте закваску в более теплое место. Идеальная температура около + 27С.

Теперь когда дрожжи в закваске активизитовались выньте ягоды и в течении 3-4 дней кормите закваску 2 ст ложками ржаной муки, для кормления можно использовать любую муку и даже остатки овсяной каши. Я использую ржаную чтобы закваска получилась максимально кислой. Закваска начнёт расти и пузыриться. Если она становиться слишком густой добавьте 1-2 ст ложки воды. Когда закваска готова

можете начинать её использовать.

Закваска может жить почти вечно. Если вы пекёте часто то закваску можно держать на рабочей поветхности на кухне и кормить её 2 ст ложками муки и 2 ст ложками воды каждый день или через день хорошенько размешав. Если вы планируете печь раз в неделю то закваску нужно плотно закрыть и хранить в холодильнике и кормить 1 раз в неделю 2 ст ложками муки и 2 ст ложками воды и хорошенько размешать.

Чтобы оживить закваску


Если вы храните закваску в холодильнике, то перед использованием её надо оживить. Для этого необходимо вынуть закваску из холодильника за 1 день до использования и подкормить как обычно 2 ст ложками муки и 2 ст ложками воды и хорошенько размешать. Закваску накрыть марлей и резинкой и оставить стоять в тёплом месте. Использовать закваску можно на следующий день. После использования закваску опять покормить, размешать, плотно закрыть крыжкой и поставить обратно в холодитьник.

Кисло-Сладкий Хлеб на Ржаной Закваске

Этот хлеб я пеку уже около 3 месяцев, почти каждую неделю. Моей маленькой семье, мне и сыну, хватает этой небольшой буханки на всю неделю. Если у вас семья больше то количество ингридиентов можно удвоить. Перед тем как приняться за приготовление хлеба необходимо прочесть весь рецепт и учесть что если вы начинаете с приготовления самой закваски то вам потребуется около 9 дней пока у вас будет свой хлеб.

Следует учесть специфику домашней закваски и расчитывать что времени на приготовление хлеба потребуется больше чем обычно. Если закваска у вас свежая (не из холодильника) то на всё про всё вам понадобиться 2 дня. На пример, замесить тесто в четверг в 15:00 (зимой) или в 18:00 (летом) и оставить подниматься, на следующий день в пятницу утром в 11:00 второй раз замесить и опять оставить подниваться, но уже в форме, до вечера пятницы и выпекать в пятницу вечером часов в 19:00 - 20:00.

Если закваска из холодильника то её надо сначала оживить, на что потребуется 1 дополнительный день. На пример, в среду утром вынимаем закваску из холодильника, кормим её 2 ст ложками муки и 2 ст ложками воды, желательно фильтрованной. Хорошенько размешиваем закваску, накрываем банку с закваской марлей, закрепляем резинкой и оставляем на рабочей поверхности в кухне где потеплее до следующего дня, до четверга. В четверг замешиваем тесто, в пятницу вечером выпекаем, всё как в примере выше.

Для хлеба вам понадобятся следующие продукты:

300 г белой простой / белой хлебной муки
100 г (около 2.5 полных с горкой ст ложки) ржаной закваски (свежей или оживлённой)
1 ч ложка крупной столовой / морской соли
1 ст. ложка мёда
150 мл тёплой воды
2 ч ложки тмина

Как делать ржаную закваску читайту здесь. Учтите что на приготовление закваски вам потребуется около недели.

Теперь готовим хлеб. Муку просеять в миску, добавить закваску, соль и тмин. Вскепятить чайник и в мерочный стакан налить 100 мл холодной воды, желательно фильтрованной, и добавить 50 мл кепятка, туда добавить 1 полную столовую ложку мёда и хорошо размешать. Добавить жидкость в миску с мучной смесью и замешать, сначала если есть можно силиконовой лопаточкой а потом рукой. Тесто будет чуть прилипать к рукам, постарайтесь не добавлять муки тогда хлеб будет более мягкий, в крайнем случае добавьте совсем немного но так чтобы тесто не было жёстким.

Тесто месим минут 5-6 и кладём в слегка присыпанную мукой ёмкость, я обычно использую керамическую миску, но это может быть нержавейка, стеклянная миска или деревянная. Старайтесь не использовать пластмассу, так как возможно попадание опасных составляющих из пластмассы в еду.
Сверху присыпать мукой и накрыть полотенцем или пищевой плёнкой и поставить в тёплое место на кухне. Тесто должно подняться в два раза. Я обычно ставлю тесто около плиты.
Учтите что на закваске тесто будет подниматься намного медленней чем на дрожжах. Зимой я стараюсь замесить тесто днём около 14:00 - 15:00 и оставляю тесто подниматься до 11:00 следующего дня. Летом я замешиваю тесто около 18:00 - 19:00, так как летом теплее и оставляю опять до 11:00 следующего дня.

На следующий день часов в 11:00 месим уже поднявшееся тесто около 1-2 минут и кладём его в форму. Так как я пеку хлеб свободной формы на камне, то во второй раз тесто у меня поднимается в миске в которую положена марля присыпанная мукой.

Когда тесто поднялось во второй раз то я выкладываю его на столе на пергамент и снимаю слегка налипшую марлю, а потом переношу тесто на пергаменте на горячий камень в духовке и выпекаю. Для формы также можно использовать обычную хлебную форму слегка присыпанную мукой. Тесто кладём в форму, сверху присыпаем мукой и накрываем полотенцем или пищевой плёнкой. В любом случае тесту надо дать хорошенько подняться во второй раз в тёплом месте, можно использовать тёплую но не горячую баню. Очень важно чтобы тесто хорошо поднялось во второй раз, тогда хлеб не потрескается.

Если вы хотите выпечь хлеб свободной формы то для этого вам потребуется специальный камень для выпечки хлеба который я здесь для простоты называю просто камень,

он может быть круглой или квадратной формы. Если в магазине не найти или очень дорого то можно использовать гранитный камень который должен быть не толще 1-2 см. Можно также использовать обыкновенную терракотовую плитку или перевернутый противень, сама я не пробовала так что ничего не могу сказать особенно про противень.

Перед выпечкой необходимо подготовить ваш камень. За 1 час до того как вы будете печь хлеб поместите камень на решётку на середине духовки и включите духовку на 140С, нагревайте камень в течении 45 минут, затем повысьте температуру до 220С и через 15 минут можете выпекать хлеб. Вместе с камнем на самое дно в духовку поставьте либо противень либо чугунную сковородку и наполните водой. Пусть стоит в духовке и разогревается вместе с камнем. Вода на дне духовки даст хрустящую корочку.

Если вы печёте хлеб свободной формы то вырежете кусок пергаментной бумаги по размеру вашего камня, слегка посыпьте мукой и перевернув миску с тестом аккуратно и медленно переложите тесто на пергамент и снимите с него марлю. Сверху опять присыпьте мукой и поставьте в духовку на камень. Выпекайте хлеб свободной формы в течении 40 -45 минут. Чтобы проверить готовность переверните хлеб на рукавице и постучите по дну, звук должен быть глухой. Также можете проткнуть зубочисткой.

Если вы печёте хлеб в хлебной форме то духовку надо разогревать в течении 15 минут на 220С а в противень или сковороду на дне духовки налейте кепяток. Хлеб выпекаем в течении 45 минут и пробуем на готовность таким же способом.

Когда хлеб готов поставьте его остывать как минимум на час на решётку, а потом положите на кухонное полотенце и прикройте сверху. Советую дождаться пока  хлеб остынет полностью перед тем как пробовать, но если не можете утерпеть то дайте ему как минимум 1 час чтобы остыть.

Имейте также ввиду что этот хлеб не может храниться при комнатной температуре дольше 2-3 дней. Я обычно нарезаю его на следующее утро и кладу в полителеновом мешке в морозольник а потом вынимаю несколько кусков по мере надобности. Из морозильника хлеб можно кушать уже через час.

Sourdough Starter


For this receipt you can use any flour, here I use rye to get the most sourness out of my starter. There are different methods of starting the sourdough culture, but I prefer this easy receipt from the book 'Wild Fermentation' by Sandor Katz. He uses double of the amounts indicated below. I use just half as I find it enough for our small household, plus it fits perfectly into my 1 liter jar that subsequently perfectly fits into my fridge.

Ingredients:
250 ml (1 cup) water (preferably filtered)
250 g (1 cup) rye flour (any other flour you wish to use, including gluten free)

Preparation time: around 7 days

Mix all the ingredients in a glass jar, stir very well and cover with the cheese cloth. Place the jar in a warm spot, I usually keep it on the counter close to the stove. Check on the mixture as often as you think of it, but at least daily, and stir it vigorously. This will distribute yeast activity and stimulate the process.

After 2-3 days you will notice tiny bubbles releasing at the surface of the mixture (please do not confuse them with the bubbles that appear after you vigorously stir the mixture). This is the indication that the yeast is active. If this doesn't happen after 3-4 days place it in a warmer spot.

Once you see the yeast is active, start adding 2 tbs of flour every day for the next 3-4 days. Here you can use any flour even cooked oatmeal, because you are now feeding the starter.

Once your starter is ready you can use it straight away and keep it on the counter and feed it 2 tbs of flour + 2 tbs of water every day if you regularly bake or if you bake occasionally, like me, once a week or less you can store the starter tightly closed in the fridge. In this case you just need to feed the starter once a week usually after you used it with 2 tbs of flour + 2 tbs of water.
